Are you looking for something a little different to jazz up breakfast? Heres an easy breakfast mix. After its prepared, you can scoop portions into small plastic bags for breakfast on the go. Add a container of low fat or fat-free yogurt and/or a piece of fruit, such as a banana, for added nutrition. The protein in the yogurt provides the brain food that aids successful students.
Ingredients:
1⁄4 cup sugar
1 teaspoon ground cinnamon
1⁄4 cup margarine, tub-style
11⁄2 cups square, whole-grain corn cereal
11⁄2 cups square, whole-grain rice cereal
11⁄2 cups square, whole-grain wheat cereal
1⁄2 cup raisins or dried cranberries
Directions:
Remember to wash your hands before cooking and to clean your work surface.
1. In small bowl, mix sugar and cinnamon, set aside.
2. In large microwaveable bowl, microwave butter on high about 40 seconds, or until melted. Stir in cereals until evenly coated.
3. Microwave one minute, stir and microwave an additional minute.
4. Sprinkle half of the sugar mixture evenly over cereals, stir.
5. Sprinkle remaining sugar mixture, stir.
6. Microwave for one minute. Stir in raisins or dried cranberries.
7. Spread on paper towels to cool.
Nutrition Facts:
Serving Size: 1⁄2 cup; Yield: 10 servings.
Per serving: 165 calories; 4 g fat; 10 mg cholesterol; 210 mg sodium; and 2 g fiber.
