Eggs in a Blanket

Although a favorite recipe for breakfast, this dish can be served at any meal. Other ingredients such as green peppers, onion and/or mushrooms can be added for extra flavor.

For a more complete meal, add a serving of fruit and skim milk.

Turning the skillet handle toward the back of the stove is a helpful safety tip to keep the skillet from getting knocked off the stove and spilling.

Ingredients:

4 eggs

¼ cup milk

1 teaspoon margarine

1 cup refried beans

4 flour tortillas

½ cup grated cheese

¼ to ½ cup salsa

Directions:

Remember to wash your hands before cooking and to clean your work surface.

In a medium bowl, mix eggs and milk with a fork or whisk. Melt margarine in skillet on medium heat. Stir in egg mixture and cook until firm.

Heat refried beans 1 to 2 minutes in microwave or in pan on top of stove.

Soften tortillas in microwave or skillet. On each tortilla, put ½ the eggs, beans, cheese and salsa. Roll tortilla to eat.

Per serving: 360 calories; 14 g fat; 225 mg cholesterol; 750 mg sodium; 40 g carbohydrates; 4 g fiber; and 20 g protein.
