The Blonde Bistro will soon move out of Spring Township’s Axemann Brewery. Here’s what we know
Changes are coming to the restaurant operating inside Spring Township’s Axemann Brewery.
The Blonde Bistro, which has been with Axemann since opening in 2020, announced on Facebook earlier this week that it intends to expand and will move to an undisclosed location within the Bellefonte area. Its final day at the brewery will be May 28, and brewery owner Rod Stahl expects a new “food partner” will take the bistro’s place by the end of June.
Bistro owner Ciara Semack told the CDT she anticipated making the new location public in the near future. For now, due to some “small construction,” she’s aiming to open her new spot around late June or early July.
“We are planning on bringing back a lot of our menu from our South Allegheny Street location,” she said, referring to the bistro’s location previous to Axemann. “So our menu is going back old school-ish. But we’re going to be able to put a little bit of flair in some new dishes, as well.
“We like to say we’re going to be fine dining with an attitude.”
Fans of Axemann Brewery shouldn’t have to wait long for a replacement either. Stahl, who opened the 20,000-square-foot-space at Titan Energy Park in July 2020, said he already has a new food partner lined up — although the partner isn’t yet ready to publicly announce their plans.
With The Blonde Bistro moving out May 28 and its replacement moving in by the end of June, that’ll leave about a month without a restaurant inside the brewery. But Axemann, which routinely has a food truck parked outside near its outdoor seating, will see at least one additional food truck — maybe more — on busier days during that stretch, to satisfy hungry customers, Stahl said.
