New owners are taking over a Pleasant Gap cafe to put their own twist on breakfast.

Morning Glory Bagels & Coffee will open soon at 113 E. College Ave., owners George and Madison Salgado told the Centre Daily Times. They will take over the former Cakeshop by Tati space that briefly operated as another cafe.

The cafe will offer signature bagel sandwiches piled atop classic bagel flavors and some bolder options, including mocha chocolate chip and sun-dried tomato bagels. One sandwich will feature a twist on avocado toast topped with mozzarella cheese, microgreens, balsamic glaze and pancetta.

The Salgados have been hard at work testing recipes since moving into the space a few weeks ago.

“We’re pretty excited to show how our recipes are transitioning into bagels and everything like that,” George Salgado said. “We have a creative menu.”

True to its name, the cafe will also offer a full coffee menu with classic flavors like mocha, vanilla and hazelnut. Its owners plan to eventually expand that menu using house-made syrups and rotating specials.

The cafe’s predecessor, Warren’s Kitchen, closed in late March after opening in February. Its owner and operator, Dustin McCartin, briefly served breakfast and lunch there before choosing to prioritize his catering business, which he said requires his full attention.

McCartin, a longtime friend and colleague of George Salgado, allowed him to use part of Warren’s Kitchen’s facility as a commissary kitchen for Salgado’s Dining Haul food truck. They remained in contact as ownership of the space exchanged hands.

“The opportunity presented itself at the right time, and we had to take it up,” George Salgado said. “We didn’t want things to stale out and let people lose interest in that spot. Dustin and Warren’s Kitchen produced a lot of momentum, and we want to keep it going.”

Unlike Warren’s Kitchen, Morning Glory Bagels & Coffee is not expected to serve a full lunch menu, though it may offer some lunch specials from the Dining Haul food truck. George Salgado launched the truck last fall after working as a caterer and personal chef for Penn State fraternities and sororities and developing his own line of hot sauces, BurnSesh.

Warren’s Kitchen’s former barista and chef are remaining on staff at Morning Glory Bagels & Coffee, George Salgado said. Support from other business leaders in the area, as well as regular customers in Pleasant Gap, has helped inspire the Morning Glory team as it prepares to open.

“Without the support from the different businesses that we’ve partnered with and the regulars we’ve met along the way, I don’t know if we would’ve had the same confidence to take this opportunity,” Madison Salgado said. “We’re excited to open this back up as a community space for the people who’ve been coming to this spot for years and others who might trickle in.”

The Salgados expect their new cafe will be ready to open on Thursday, April 16. Morning Glory Bagels & Coffee will operate from 7 a.m. to 2 p.m. Monday through Saturday once it’s up and running, they said.
